I’ve got delivery of my Shadow a little earlier than expected. I will be running games mostly but I just wanted to know if there is the option to run software like vMix etc to do remote live video production?

Several people use their Shadow VMs for activities like that - just search the forums for something like “not just for games.” As long as the terms aren’t broken (cryptomining, pirating, etc.), you can do what you want.
Just know that you’ll still be subject to the AFK timer for shutdowns...the Shadow VMs are not “always on,” as most of us couldn’t afford the service if they were. If you require a dedicated 24/7 GPU-accelerated offering, you’ll need to look elsewhere.
