so I was playing GTA Online stunt races, everything was going good, then suddenly is started lagging to the point of being unplayable, I have about a 500 Mbps connection, and Shadow has NEVER been this unstable before, what do I do? do I just wait a few hours before trying again?

Same here, on the west coast getting 60%+ packet loss. Tried rebooting Shadow, my computer, my modem/router, nothing worked.
